TOFU QUICHE

Ingredients

 

1 lb firm tofu

 

1 t onion powder

 

1 C plain soymilk

 

½ t garlic powder

 

¼ t turmeric

 

1 T Chicken-style seasoning

 

1 T flour

 

3 T nutritional yeast

 

1 t sea salt

 

¾ cup chopped onions

 

1 cup chopped spinach

 

1 cup chopped broccoli

 

½ cup mushrooms

 

½ cup other veges eg sundried or fresh tomatoes, asparagus, zucchini squash

 

 

 

Directions:

 

Blend until creamy:

 

1 lb firm tofu

 

1 t onion powder

 

1 C plain soymilk

 

½ t garlic powder

 

¼ t turmeric

 

1 T Chicken-style seasoning

 

1 T flour

 

3 T nutritional yeast

 

1 t sea salt

 

Set aside.

 

 

 

Vegetables

 

¾ cup chopped onions

 

1 cup chopped spinach

 

1 cup chopped broccoli

 

½ cup mushrooms

 

½ cup other veges eg sundried or fresh tomatoes, asparagus, zucchini squash

 

Lightly sauté in 2 T olive oil or 2 T water - onions.

 

Add broccoli and cook for 1 min, then add spinach.

 

Cook for further 1-2 mins.

 

Layer veges in bottom of unbaked whole grain pie crust and pour tofu mixture over top.

 

Bake @ 350° 1 ½ hrs until set.

 

May need to cover edges (Remove last 15 min of baking time) of piecrust to avoid burning.

 

Cool at least 15 min before serving, but this is also good cold!!
