Doughnut Rolls



1 C warm water


1 Tbsp active dry yeast


1/3 C soymilk


3 Tbsp honey


1 tsp salt


¼ C light olive oil


1 tsp vanilla


1 1/2 C whole-wheat pastry flour


2 ½ C unbleached enriched flour




Dissolve yeast in warm water.


Add soymilk, honey, salt, oil, and vanilla.


Add flour to liquid ingredients.


Mix flour only enough to dampen it.


Over mixing will make doughnut rolls more like regular rolls.


Roll out approximately 1/3-inch thick on floured surface.


Cut with a doughnut cutter.


Place on oiled cookie sheet.


Let rise only enough to look like doughnuts.


Bake at 350F for 15 to 20 minutes.
