Falafels

Ingredients

 

2 C dried garbanzos, rinsed

 

1 onion

 

3 cloves garlic

 

1 tsp chopped or ground coriander leaves

 

¼ C finely chopped dried parsley

 

1 tsp ground cumin

 

1 tsp salt

 

1/4 C flour

 

Olive oil

 

Directions:

 

Cover garbanzos in water.

 

Soak overnight.

 

Grind garbanzos in a blender until fine.

 

Add spices and flour.

 

Roll into small balls about 1 ¼ inch in diameter.

 

Flatten with a fork.

 

Saute on both sides until golden brown.
