Blueberry Nicecream

Ingredients

 

1 c raw cashews

 

1 c water

 

1 T honey or date puree

 

5 mint leaves

 

4 c frozen blueberries (or raspberries or mango)

 

 

 

Directions:

 

For best results, use a food processor rather than a blender. Blend cashews with about half the water to form a smooth paste. Then add the rest of the ingredients including the rest of the water.

 

Pour into serving glasses, garnish with a spare berry and mint and serve immediately.
