Corn & Pepper Fiesta

Ingredients

 

3 cups frozen or canned corn

 

1 red sweet bell pepper, chopped finely

 

3 green (spring) onions, chopped finely

 

2 Tbsp lemon juice

 

1 Tbsp olive oil

 

½ tsp salt

 

Directions:

 

Combine all ingredients together and serve.

 

Makes 4 cups.
