Sweet Potato Pita Wraps



12 oz sweet potato


1 red onion


2 cloves garlic, minced


1 tsp cumin


1 oz raisins


½ tsp salt


1 oz sliced almonds


2 T olive oil


2 pitas








Preheat oven to 400 oF


Peel and dice sweet potato into ½-inch cubes


Lay out on a baking sheet with dash of oil and a pinch of salt


Bake 20 mins until soft.


Meanwhile, heat 2 tsp oil and fry onion for about 5 minutes on medium heat until it softens, then add garlic and cumin seeds. Cook for another ½ -1 minute, stirring well.


Add raisins and salt, stirring until tender.


Add the roasted sweet potatoes and mix well over heat for a few minutes.


Just before serving, sprinkle the sliced almonds on top.


Halve the pitas and toast them gently.


While warm, spread with hummus and fill with the sweet potato mixture.


Serve immediately.
