Stuffed Tomato with Quinoa Salad

Ingredients

 

4 Plum tomatoes

 

½ cup Quinoa, cooked

 

2 Tablespoon sweet bell pepper (capsicum), chopped

 

½ cup small red beans

 

1 Tablespoon chives

 

2 baby corn, sliced

 

1 button or Bella mushroom, chopped

 

½ avocado, chopped

 

Salt to taste

 

 

 

Directions

 

Slice ½ inch off top of tomato and hollow out the inside.

 

Slice a small section off the bottom to allow it to sit flat.

 

Mix all ingredients together in bowl to make quinoa salad

 

Stuff salad into tomatoes

 

Serve
