Raw Couscous Salad (Gluten-Free)

Ingredients

 

¼ of a medium cauliflower crown

 

1 large bunch finely chopped flat-leaf parsley

 

1 Tbsp finely chopped fresh mint

 

4 finely diced tomatoes

 

3 green onions finely chopped

 

½ English cucumber peeled, finely diced

 

2 Tbsp olive oil

 

2 Tbsp fresh lemon juice

 

1 Tbsp

 

½ tsp salt

 

Directions

 

Chop cauliflower roughly, and pulse in food processor until it has the consistency of rice.

 

Transfer to a large mixing bowl and add the rest of the ingredients.

 

Mix thoroughly and serve.
