Curried Chickpea Burgers

Ingredients:

 

1 ½ cups cooked chickpeas

 

½ cup rolled oats

 

10 baby carrots or 2 carrots, peeled and roughly chopped

 

1 Tbsp oil

 

1 ½ tsp curry powder

 

½ tsp paprika

 

¼ tsp turmeric

 

¼ tsp sea salt

 

1 Tbsp fresh parsley (optional)

 

3 Tbsp sunflower seeds

 

4 Tbsp pumpkin seeds

 

 

 

Directions:

 

Preheat oven.

 

Put carrots, oats, and spices in food processor and process for about 30 seconds until smooth

 

Add oil.

 

Add chickpeas, half a can at a time, processing until smooth.

 

Turn out into a bowl, and add seeds.

 

Shape the burgers with wet hands or wet utensils.

 

Place on a greased baking sheet and bake at 375ºF (180ºC) for 20 minutes each side.

 

Makes 6-8.
